村上春樹大作<<挪威的森林(ノルウェイの森)>>中, 我第一次明確認識不為別人而活的人, 作中的<我>就是這樣一號人物。 大部分人上大學翹課, 在老師點名時請同學假冒舉手以求出席率能過關, 而<我>常常在老師點名時明明在場而不舉手答有, 只是默默的注視這一切在空氣中發生.... 恩, 這是村上春樹式的美學!
天底下就有這種做事不求名利, 不為別人而活的人, 雖然這種被稱為"憨人"的人有越來越少的趨勢。我認為Keith O. Nicholes可以說, 就是這類人物在葡萄酒界代表。
此白頭歐吉桑本在美國海軍服役, 退伍之後參加退伍軍人進修課程來到加州修MBA, 從此迷上葡萄酒, 有點R.P.的味道, 但根R.P.不同的是他在MBA之外開始學釀酒, 並展開各大名莊的釀酒技術之旅(而不是品酒), 終於在1991年在加州Edna谷創建Nichols Winery & Cellar.
選這瓶來玩是因為：
1.)E大說好!
2.)酒標漂亮鮮明有解構主義風!
3.)Clone 777. (聽說是從DRC園剪來的)
What is Clone 777? 這下<我>來吊書袋一下。
Pinot noir Clone 777: National ID 1617.
Origin/Source: Morey St Denis (Cote d'Or), A.N.T.A.V. (1981).
Description:-
Bud growth: typical of the Pinot but the copper-colour is pronounced.
Adult leaf: quite small with 3 lobes (or often with 5), dark green blade, very bullate, an involute profile, revolute edges, bullate top face, short teeth on convex sides.
Branch: quite coloured, reddening on the side exposed to the sun.
Habit: drooping.
Cluster: small, conical, compact, short peduncle, a little lignified.
Berry: small, spherical or elliptical. irregular diameter.

Earliness: Budburst = average to late. Flowering = average to late. Ripening of grapes = early.
Fruitfulness: just above the average: 1.2 - 1.7.

Susceptibility to grey mould: not very susceptible, but without strong resistance.
Pruning: Guyot with a bud-stick is preferable.

Organoleptic characteristics of the wine: strong and intense colours, strong aromas, typical of this type, good balance - round, tannic, appropriate to keep.
Class of wine: leading group, the small berries make it particularly suitable for making red wine.
Sugar level: above average by 0.4 degrees.
Total acidity: below average (0.5g/l).

Locations: must be planted in a quality zones. Brings a qualitative bonus in any situation. Endeavour to avoid conditions that favour excess vigour that exposes the plant to uneven development of berries on a bunch.
Production: below the reference average - in the order of 15% below that of 115.
Type of clone: high quality Pinot with a short cycle (quite late bud burst and early maturity) with a higher degree of sugar content, weak acidity and a good performance against Botrytis. Moderate returns enable it to produce an excellent quality wine to be kept.

簡單說, Clone 777就是柏艮地 Morey St Denis 園剪下來的葡萄藤, 嫁接到其他地方培育的葡萄, 但他要求高品質地塊重植, 太過肥或不平均土質會讓它結果大小邊, 造成果質不均衡 。
而Clone這個字也許會讓您聯想到<<星際大戰>>中的複製人大軍, 這是基因工程嗎? No! 其實葡萄最常用的繁殖方式就是Clone再加以嫁接, 而不是從葡萄籽長出新株來, 因此Clone在葡萄酒嚴格來說不是壞字, 許多優良葡萄園的葡萄其實都是來自Clone, 從某個優良的單一芽苞而來。
沒喝過Morey St Denis園的<我>, 於是帶著這瓶Clone 777 傻傻的去知貳茶館被電...

Clone 777雖是2001年老酒, 比the Holt高出11歲, 但顏色仍偏深, 這是它的特點。the Hilt雖是年輕辣妹, 但來頭非常大, 釀酒師是Matt Dees, 他本身從知名模拜酒Staglin作起, 師從Andy Erickson, 但Dees拒絕去接Screaming Eagle的釀酒師, 這也是個非常符合村上春樹美學的憨人。因此, 這是一場兩憨PK的局面。
先從年輕辣妹the Hilt說起, 年輕, 卻不失厚實的酒體, 一絲絲優雅的果相, 伴隨雲淡風輕的Sonoma風土味道, 單喝有味, 搭餐亦佳, 知貳團隊果然名如其實。
老酒的Clone 777這邊, <我>一拿起酒杯, 就開始知道Keith Nichols的與眾不同了。拼命重視風土的釀酒師, 讓Clone 777表現出飽滿的黑色莓果香氣, 催促<我>唾液開始分泌, 有望梅止渴的感覺。 入口後顯現十足的爆發力, 仍高的酸度與酒體以及後面帶出的甘甜, 持久的莓果以及糖果尾韻, 整個人立刻掉入花海, 被高張力的酒體所包圍! 搭配餐點卻毫不唐突, 反更帶出新鮮肉質的鮮美! 這是... 對不起又要用下面這張圖來表示...
